Why Shrimp Need Colour Food

Yellow, orange and red shrimp cannot produce the pigments behind their attractive body colouring themselves. They have to take them in through their food. These pigments, called carotenoids, occur mainly in algae, flowers, fruits and leafy vegetables. Once eaten, shrimp and crayfish convert carotenoids into their own colourings, especially astaxanthin. Astaxanthin forms a molecular bond with the protein beta crustacyanin, and these compounds are stored in special colour cells. The result is each species' own characteristic colouring.

Flamingos work the same way. When they eat small, carotenoid-rich crustaceans such as artemia, the carotenoids and astaxanthin turn their feathers pink. If their food contains no natural colourings, they lose that colour and turn white. Shrimp kept on a diet low in carotenoids face a similar problem.
